Lazy man's chicken pot pie

2 boneless chicken breasts - cubed
1 bag frozen mixed vegetables
1 large can cream of chix soup
1 package store bought pie crust

Cook the chicken before hand
Mix chicken, veggies, and soup in bowl, and stir
Fill pie crust, and use other on top.

Bake.

Okay...so a few things with this one. It's pretty filling because the store pie crust is pretty heavy. That said, I always find mine is grossly under seasoned. The first time I made it I needed to douse it with pepper. As you make this a few times, you can tweak it with whatever spices you want.

Ultimately, it can be made in advance, and just popped in the oven when you get home, so it is a pretty time saving meal.

Good recipe, we added 1 can of chicken ala king and peeled a already cooked plain flavored rotisserrie chicken instead of cooking our own, it is fantastic
