Prep time 30 mins- makes 4
4 Potatoes
1 lb of Ground Beef
1/4 lb of Velveeta- cut into 1/2 inch cubes
1 small tomato chopped
2 green onions sliced
1/2 cup of reduced fat or light sour cream
~Prick potatoes in several places with fork. Microwave on High 14 mins or just until tender. Flip halfway thru.
~Meanwhile- brown meat in large skillet: drain. Add velveeta, tomato, and onion- mix until blended stirring frequently.
~Split potatoes, mash insides with fork. Top with meat mixture and sour cream.
