The hamachi (yellowtail) we get is super mild...no fishy taste at all? The only raw fish I ever eat is tuna, salmon, and yellowtail. I just try to avoid too much tuna because of the heavy metal content.
If I had to recommend one roll to start with, it would be the spicy tuna roll, but if you came and ate at our sushi restaurant here in Denver, it would be the jalapeno hamachi.
Try some good quality tuna for ur first raw experience. I also really like red snapper. U might like salmon too. Stay away from the spicy scallop and the mackerel.
It took a while to get you on the sushi bandwagon too.

Ask for a piece of tuna sashimi.
It is amazing. I have the tuna lovers usually once a week. Spicy tuna rolls and sashimi tuna.
Yellow tail is awesome as well.
