Frying a Turkey

I know this is not as important as BTJ's decision (Did anyone else notice the centerfield wall during the NYY and BOS game they had a give to the Jimmy Fund? Thought it wsa funny.), but i was going to try and fry a turkey tonight and just wanted to get some advice.
We have and 18lb wild bird, picked with the skin still on, that is in the freezer, I was going to take it out around noon to let it thaw out. Just need to know if there was a time to cook per pound and what would be good to inject it with.

Keep your oil temperature to between 325-350

Turkeys 12 lbs and under 2-1/2 minutes per pound, and 12 lbs and over 3 minutes per pound

I like to inject with cajun sauce.

Yes, it will.

I actually like to inject it with melted butter with a small amount of honey.

Gonna take a couple of days to thaw that bird. Turkeys should be thawed out in the fridge, not out in the open unless it's submerged in water.

See if your local store has "Tony Chacheres" They make a bunch of cajun marinades. If they dont have the marinades use the creole seasoning and rub the bird with it inside and out.

Here is what we did - we took it out of the freezer and put it in a cooler wan submerged it in water - for 6 hours - then we injected it with seasoning and other spices - let it sit for a hour covered in foil. Fried it for 1hr 15 mins and it was perfect. thanks for your help.
