We made this recipe last night and it was excellent. Our guests really enjoyed it as well. It's an emeril recipe. We also made the side that is in the recipe (pear and parsnip puree) and that too was gobbled up quickly.

Pork Tenderloin Stuffed with Prosciutto and Dried Fruit with Port Wine Sauce

Tenderloins butterflied, pounded to make even and lined with prosciutto.

Filled with stuffing including dried cranberries, golden raisins (both marinated in cup of boiling port wine) toasted breadcrumbs, shallots, garlic, and goat cheese

Tied back up and ready to sear, then into the oven to bake. No pictures of finished product, it went too fast! Definitely recommend trying it sometime.

Thats some good looking tennderloin. Did you get the meat from meat markert or a grocery store?

looks and sounds great. how many people did it feed? recipe says serves 4, but looks like it would satisfy 6-8 easily (with other sides).

I made pork tenderloins last night also except I stuffed mine with Boudin.....

425 degrees for 50 minutes.....


not much left and will finish tonight :00hour :00hour

he does the show "licensed to grill"

I did a pork tenderloin w/ goat cheese and all the other stuff in his recipe. Search his recipes on the net. AWESOME! He had a show called nascar bbq or something, gonna find something off of that for this sunday..

i did a boston butt last sunday, threw it on the smoker at 6 in the morning and took it off at 7. It was excellent. I put olive oil, hot sauce, pepper, and lemon juice on mine. I injected it w/ hot sauce and o my it was scrumptious.
