We made this recipe last night and it was excellent. Our guests really enjoyed it as well. It's an emeril recipe. We also made the side that is in the recipe (pear and parsnip puree) and that too was gobbled up quickly.
Pork Tenderloin Stuffed with Prosciutto and Dried Fruit with Port Wine Sauce

Tenderloins butterflied, pounded to make even and lined with prosciutto.
Filled with stuffing including dried cranberries, golden raisins (both marinated in cup of boiling port wine) toasted breadcrumbs, shallots, garlic, and goat cheese
Tied back up and ready to sear, then into the oven to bake. No pictures of finished product, it went too fast! Definitely recommend trying it sometime.
