Just cooked my first bone-in beef roast. Rubbed it with olive oil. Stuffed it with garlic. Cooked it with fat side up so it would drip on meat.
Seared it for 15 minutes at 450 and then cooked it on low heat for three hours.
Wrapped carrots, potatoes and green peppers in foil and cooked on oven rack with the meat.
Cooked it until temp was 125 degrees and then let it sit for ten minutes.
2 beers and a glass of red wine and it was done.
My son had three servings.
Also had Apple pie and ice cream.
