Did these a few weeks ago for the superbowl and lets just say there were no complaints. Let me say that I usually stuff jalapenos instead of chicken but the store I stopped at was out and I didnt have time to go anywhere else. Since everything else was already in the bugey I figured I would just find a substitute for the jalapenos and incorporate a can of them. I prefer dark meat when doing something like this because it doesnt dry out as easily.

Flatten chicken. I cover with a plastic grocery bad so juices dont shoot everywhere.

Mix peppers and cream cheese

Fill and roll. Put rolled chicken in the freezer for about 45 minutes so cutting is easy. Wrap in bacon following cutting.
