Finally, after several years of trial and error...boy there is some really bad barbecue restaurants here, we almost just gave up the search.

First off, I have eaten Texas-Oklahoma-K.C. "Real Deal" barbecue for 30+ years.
Barbecue to different people across the USA undoubtably means different expectations.
I like meats fresh off the smoker grill, meats with a smoke ring and ribs with meat that melts in your mouth,standing alone on the house seasonings.
This means an ON-SITE smoker/pit grill.
If barbecue is served heavily sauced, something is being hidden. Usually dry overcooked or re-heated leftovers.
You know you found the good stuff when you smell the smouldering hardwoods a few blocks away and the line consists of big bubba types .

We had the pulled pork combo for $10.99. Perfectly smoked, moist, huge portion with great, meaty, baked beans with a little heat and Mom's recipe Bacon and Red Potato salad and a drink.
Its an Arkansas family who operates the restaurant and home recipes are in use. The pulled pork hardly needed any sauce at all, their sweet sauce is AWESOME.
They started as a food truck couple years back hence the name...
I saw the ribs, outstanding appearance and judging by the glazed eye look on the patron gnawing on them, scrumptious.
Saw an "outlaw burger" it was 10 inches tall and a Vegas best burger award winner.
We got there at 11am, and by noon, there were no empty seats and a line out the door.
Pretty close to the strip, probably a short 10 minute ride from Circus Circus.
If you have a true hankering for real deal Texas, K.C., Okla style BBQ, this is it.
ROLLIN SMOKE 3185 S. Highland, plain unfancy bldg in a light industrial area west of Circus Circus....not far from Counting Cars of TV fame.
Kind of difficult to find, drove my Navi crazy but its worth the minor trouble.
