just made some fish tacos that people would wait outside in line to eat and I am seriously thinking about a 2nd career in opening a restaurant with seafood I cook and others that are good at it:shrug: this type of healthy food is growing in popularity every day!!!


marinated fresh salmon in fresh lemon juice for an hour then coated in my special rub

grilled the salmon to perfect
heated fresh soft shell organic tortilla wraps wiped inside with olive oil
loaded sliced salmon topped with fresh 3 cheese mix of fontina, asiago and parmesan cheese
topped with fresh pico de gallo
topped with fresh salsa verde

AWESOME!!!

you ever use anything other than salmon?

don't know if that was a knock or not but yes I use all kinds of different fish ... I like to use fish that has more flavor than your basic white fishes that most people use like cod

matter of fact I currently have in my freezer some mahi mahi, red snapper, grouper, swordfish,halibut, Chilean Sea Bass but I don't like to use the Bass for tacos cause it is $20 a pound {which is a GOOD price} and is the best fish you can buy so I like to eat it alone

I just used the salmon because I bought it fresh and did not want to freeze it

its all about what works best for you and I LOVE fish and cannot eat much healthier :0074

I did hear somewhere that eating fish more than 4 times a week is bad for men inparticular is bad. Iodine I think maybe?

Dunclock, i took your recepie and ran with it.

Let the Salmon marinate in some Lemon juice w/ a 5 pepper rub on it.
Grilled it on some cedar planks to perfection.
Took the flour tortilla's with a little EVOO and garlic salt and grilled those ( oiled side only ) to a nice crisp.
Topped with pepper jack cheese and salsa

OUTSTANDING

fish tacos ROCK!!! I would have done this if I could have gotten on that show Next Great Restaurant... very easy to do, quick, low cost and you can do so many different kinds of fish and extras to "spice" em up :toast:
