Clean greens, add salt pork, onions, a dab of oil, pepper and salt. Can add a dab of hot sauce. Cook in large stock pot with a little water to keep from burning until greens are cooked.

You must be from up north to have never had collards. I didnt have them until I moved to Ga many years ago.
They are from the Kale family and very good for you.
Another thing I really love is what we call butter beans.
