This meal takes 15 minutes start to finish.
Open bottle of wine to let breathe.
Coat top of one thin pre-made pizza crust(thin) with good olive oil. Thinly slice heirloom tomato and arrange on crust. Pat lightly with paper towel to absorb as much water as possible. Arrange fresh basil leaves on the tomatoes. Dry your top quality mozzarella cheese thoroughly and slice into 1/4" - 3/8" rounds. Spread the rounds out on the pizza.
Bake at 475 for 10 or so minutes. I keep an eye on it after 8 minutes.
While pizza is in oven, toss baby spinach(or salad greens of your choice), walnuts(or pecans), thin shaved red onion, sliced strawberries( have also recently used dried cranberries successfully) and balsamic vinagrette.
Pour wine and enjoy.
