Need suggestion for dinner that will make Joker proud, and Agent throw a stroke

Have some friends coming over around 6:00 and need to show off the new Big Green Egg.

I'm guessing steak is the way I will go, but am open to suggestions. Got about 5 hours to make something Joker approved.

Thoughts?

Lay it out flat
Cover in feta cheese and add chopped spinach
Add salt
Add pepper
Roll it up and tie with butchers string
Grill at 350 until medium or even medium well if you like flank a little crispy.

Done.

Did someone tell you lamb is classy recently?
It's like someone told you this and all of a sudden you are telling everyone or anyone who will listen. Fail.

I don't eat beef, especially middle of the road beef from the low end grocery store, it's pumped with chemicals. I get my lamb and chicken from a local farm that doesn't use chemicals. Why would you feed your family foods that are filled with chemicals?

I love lamb, been eating it for 60 years............you love drive thru. :facepalm:

I put some tin foil on the BGE grill with holes poked I use a plate setter and drip pan for jalapeno Poppers and Jalape?o Shrimp Poppers
375 for about 15 -20 min for both maybe 10 for the shrimp.

and to finish - I get the egg upto 500

Grilled Scallops - its hard to do. 2-3 min each side
I like rare scallops, the internal temp should be 120?125. 140?150 degrees is OK. Anything over that it will be like rubber.

After the scallops are done cooking, they will drip a little juice onto wherever they are sitting. If you place them on a rack for a few minutes (like you would a steak) before you serve them, you can keep them from loosing that crust, sitting in their own juices.
