sweet potatoes in the oven baked...a little butter, sour cream, cheese on it

New potatoes halved. You can add quartered onion, carrots, peppers... whatever
Toss with Olive Oil and seasoning of choice
Throw on a rimmed sheet
Turn potatoes cut side down (so they get crispy)
Put in cold oven
Heat to 375 for around 40min


For sweet potatoes...
Peel and slice into rounds at least 1/2 in thick
Throw on rimmed sheet
Pour on some Olive Oil
Salt both sides
Cayenne pepper on just the exposed side
Put in cold oven
Heat to 375 for around 40min
The sweet potatoes carmelize on the bottom and you get a great salty/sweet thing going. Great with BBQ!

Per the cold oven I read it's better to bring the temp of the food up slowly which encourages crisping or some shit.

I make this type of side frequently because it's easy and lets me focus on whatever meat it's going with.
