Roasted vegetable and red bean soup

Just made it up......



Dice 1 cup each of squash, sweet potato and pumpkin. Toss in evoo. Add sea salt and bake @ 400. Saut? garlic, onion, bell pepper and a jalape?o in evoo. Add teaspoon of tomato paste. Add 1 lb dry beans. Once beans are coated, add 8 cups veggie broth or chicken stock and bring to rolling boil before covering and simmering. When roasted veggies start to brown at edges, dump into beans.

Just got to this point. Gonna let simmer until dinner. Smells good already:toast:
