Softshell crab and hummus sandwich

Had 2 yesterday. Awesome.


You'll need:

Whole wheat pita
Soft shell crab
Quality hummus- easy to make, but I buy mine locally
Evoo
Black pepper
Sea salt
Cayenne pepper
Alfalfa sprouts- other sprouts can be substituted


Pat dry crab. Season with both peppers and salt.
Place crab in a very hot pan with a small amount of evoo
3 minutes per side will do
Season crab again
Toast pita in oven and spread on generous amount of hummus
Place crab on pita, top with sprouts,
Fold pita and eat

I don't often have softshell grab and hummus sandwiches, but when I do, I prefer mine without the side of politics.


In all seriousness, sounds like a good lunch. Will have to try sometime.

I love Soft shell crab. However, in Texas all you get are very very small ones. I miss the days of going into the fish market in Kingston NY and buying huge soft shell crab for $1.25 each :violin:

I changed this up a bit today. I added baby portabella and thinly sliced jalapeno stir-fry to the sandwich in place of sprouts. Very tasty...
