We're having some good friends over for a swim. He's the guy that's taught me everything I know about BBQ so the pressure is on. Not really, they are such a great family I could serve them just about anything and they'd tell me it tastes delicious.

I do hope they turn out great though so I am going to pull out all of the stops. Wish me luck.

:00hour

Fire starts at 12. Ribs go on at 1. Supper at 6.

Just sat down. It went great. I used apple juice and rum in the drip pans below the cooking great.

After two hours on the smoker I pulled the ribs, coated them in butter with a thin layer of light brown sugar. At that point I double wrapped them in foil for one hour.

After that I took them out of foil and put them back on the cooker for two more hours.

Everyone said they were great. I think they could have used another hour in the foil. I like them to fall off the bone a little more than they did.

Watermelon, chips and a nice salad. Great afternoon with some great friends. I was actually able to forget it was Sunday night for a while.

I still wish I knew as much about BBQ as my buddy.
