I have been grading teams (I watch at least a couple of games a night) since the start of the year. I have put them in three categories- 1) teams that tend to be involved in a lot of overs 2) teams that go over and under pretty evenly 3) under teams-

I add the teams together and play accordingly. For tonight these would qualify but I have not played them yet. I put my rankings next to each team.

I know the season is early and it will probably take a few weeks to get a better feel for this.

Over 1Toronto/2Carolina (helps that Irbe is out)
Over 1NJ/2NYI (Osgood might be out- back to back for Isles)
Und 3Cal/3Nash- (Turek might be out?)
Over 3Edm/1Col (Salo is hot right now???)
Over 1Vanc/3Dall (play over on Vancouver all year, they are the Texas Rangers of Hockey)
Un 2Tbay/3SJ- (struggling offenses- SJ great D)
Un 3Phoe/3Chic- (Phoenix big time under team, can't score and great defense)
Un 2Stl/3LA- could go over but LA having trouble scoring

I like your methods. Trying to key on certain teams and finding their "identities" in terms of totals as been my preferred methodology as well.Nothing like when it works(see Flames-Preds final 1-0)

Also I believe that a teams over/under record be it baseball or hockey is the most crucial element for handicapping totals as it automatically tallies intangible x factors and spits out one fact..The team either is a good under team/over team or middle of the road team. Of course there are some other ingrediants that can add or delete from a play.ie: rest, scheduling, goalies, opponent etc but the teams identity holds the greatest weight
