Although made with turkey, this is quite good, and is definitely a healthier alternative to ground beef.
1 tbsp. olive oil
1/2 green pepper, chopped
1/4 cup shredded cheddar cheese
1.5 tsp italian seasoning
1/2 tsp salt
1 large egg - lightly beaten
1 tbsp. brown sugar
1/2 onlon, chopped
2 garlic cloves, minced
1/4 cup bread crumbs
1 tsp ketchup
1/2 cup ketchup
1/2 tsp pepper
1 package ground turkey (usually comes in 1 lb.)
1 tsp mustard
1. Heat oil in large skillet
2. Add onion, green pepper, and garlic. Cook 3-5 minutes and cool. The veggies should be cooked, but not soft yet.
3. Combine onion mixture, cheese, bread crumbs, egg, 1 tsp. ketchup, salt, pepper, italian seasoning, and ground turkey.
4. Pack into greased loaf pan.
5. Bake at 350 for 35 mins.
6. Comibine 1/2 cup ketchup, brown sugar, and mustard.
7. Spread over meatloaf and bake an additional 5 mins.
