Last night I grilled out---

Home made chili and cornbread. Lots of Bud Lights as soon as the wife gets back from Grocery store.

Just kidding, my wife really don't let me eat that kind of stuff her being a diabetic and all.

So when I want it it's usually on Football days with my friends at the sports pub:mj06: :mj06:

Sounds awesome though, I may have to have one of those days tomorrow when she's throwing a baby shower. Time to make some calls :D

Crockpot Chicken, Beans and Corn Stew

made 6 quarts today!

one of my faves.

this time I used package of chicken legs. I pulled the skin off with paper towels, so less fat in stew. I browned 'em first in steel pan with olive oil to get richer flavor for stew. Deglazed the pan with water and dumped that in.

--first 4 hours:

1 chicken, 3 lbs, cut up
1 onion, finely chopped
1 cup cubed ham
2 potatoes, peeled and chopped
8 cups water

--last hour:

2 cups canned chopped tomatoes and juice
3 cups canned cannellini beans, rinsed and drained
3 cups frozen or fresh corn
2 teaspoons salt
1 teaspoon sugar
1/4 teaspoon freshly ground black pepper
1/4 teaspoon dried oregano

preheat 6 qt crockpot to high

Combine the chicken, onion, ham and potatoes in the crockpot. Pour in the water. Cover and cook on the lowest setting for 4-5 hours, or until the chicken is tender.

Remove the chicken from the pot and strip the meat from the bones. Return the meat to the pot. Discard the skin and bones.

Add tomatoes, beans, corn, salt, sugar, pepper and oregano. Cover and cook on the highest setting for 1 hour.

Serve hot (6-8 servings)

with drinky!
