I do mine more like this guy but am going to try the first method I posted, some time this coming week. I cook mine closer to 5 or 6 hours.

Good stuff. I've got stuffed jalapenos, bacon wrapped mushrooms and two chuck roasts on the smoker right now.

I'm going to smoke them for about 5-6 hours with applewood and then wrap them and put them in a cooler for 2 more hours.

Can't wait.

Ive got a barbecue question. I dont have the big green egg yet but someday I will get one.

I got a large homemade type grill. How do you keep the fire hot with charcoal when you are going to cook something for 4 or 5 hours ?

You dump more charcoal in and then hit it with
the charcoal lighter ? My wife always yells at me if she sees me doing that ?

Cut back on the air flow so your fire is low and slow.

Morris is correct about the air flow if you are cooking slow as you describe. I would think if you are cooking like that a smoker would be a better option though.

If your charcoal runs out you don't have much choice. If you pour more charcoal on top of the fire then I don't know why you need to "hit it" with lighter fluid. It will light off of the coals.

Never, I repeat never put new coals on existing ones. Purchase a charcoal chimney and get the coals to the cooking point before pouring them on the old ones. If you dont do this the original dark black smoke that comes off the coals penetrate the meat and makes it extreamely bitter. This is what they look like.

People use that because they don't like using lighter fluid. I haven't ever been able to taste lighter fluid on my meat. I let it cook off for a good while before putting meat on.

I don't agree with putting coals on hot coals. Never had a problem with taste.

Also, no reason why you can't use LUMP COAL for a long cook. You can pretty much shut all vents down to a little crack and it'll burn all day.

I like the BGE because it's easy to control the temp and it has a very easy and effective system for indirect cooking, which I do most of the time on a long cook.

I swore by the chimney too then stumbled across an thread where some dude tested every possible way to light a BGE....the best & fastest method was using Isophryl Alcohol (91%) that you get at Wal-Mart....pour about a thumb's width from the bottle in a dinner plate size area...wait 20 seconds and lite it up...please stand back....it leaves no residue...that's all I use now...GL

The point wasnt how to begin but rather how to add coals once the first batch is burning out. Thats a good tip though.
