Getting ready for a smoke tomorrow

Making some babybacks, a pork shoulder and some beans on the smoker tomorrow afternoon/evening.

:00hour

The shoulder and ribs are rubbed and are all ready in the fridge.

These are the beans that I just prepared. I've never made them before but they are very popular on the smoking forum I read.

WICKED BAKED BEANS
(Beans that will even make Chili Heads happy)

6-8 strips of bacon cut into 1/2 inch squares
1/2 Medium onion, diced
1/2 Bell pepper, diced
1 - 2 Jalapeno Peppers, diced (seeding is optional)
1 - 55 ounce can Bushs Baked Beans
1-8 ounce can of pineapple chunks, drained
1 Cup Brown Sugar, packed
1 Cup ketchup
1/2 - 1 Tbs. dry (ground) mustard

Saute bacon pieces in fry pan until crispy and remove from pan with a slotted spoon. Saute onion, bell pepper and jalapeno pepper until tender.

In a large mixing bowl combine beans, pineapple, brown sugar, ketchup and dry mustard. Stir in bacon pieces and vegetables. Pour into a 12X9 or a deep 9X9 aluminum baking pan. (While mixing if things look dry, add additional ketchup 1/4 -1/2 cup at a time)

Place in a 220-250? smoker for 2 1/2 - 3 hours (make sure temperature of the baked beans reaches 160? ) or place in a 350? oven and bake for 1 hour.

NOTE: If you are making these beans as a side dish for Kansas City style pork ribs, smoke the removed skirt meat for 1-1 1/2 hours, then dice the skirt meat and stir into the Baked Beans.

DISCLAIMER

With the Jalapeno pepper and the dry mustard these beans have the potential for some MAJOR heat. CAUTION should be exercised when feeding these beans to small children and/or the elderly.

To make this recipe Family Friendly, omit the Jalapeno pepper and the dry mustard.


Saving the drinking though until I get to Lambeau...

The pork butt will stay on until 10pm. That will have been 8 hours.

At that point I will foil (twice) and throw in a cooler full of towels until morning.


When I get up around 6am that thing will be fall apart tender and still piping hot.

Not that I need a pulled pork sandwich for breakfast but I might need to try a bite.

I'll take some pictures then too.

Thanks for the beans recipe. I've used apple pie filling in my beans before, but not pineapple, I'll have to give it a shot.

If possible I try to save about 1/2 pound of pulled pork from my previous smoke and put that in my beans too. Really kicks it up a notch.

Keep Smokin' and keep posting the recipes.

Looks great. Was gonna run to Sams and get me some ribs but remembered I broke my plate setter and can't cook indirect. I won't attempt cooking ribs direct so will have to pass until I get a new one.

I pulled it off the grill when it was hot, on my last cook, and dropped it on the lawn like I usually do. This time it broke in about 20 pieces :(

Everything turned out great. The wife just loves BBQ.

It is not as much fun doing a smoke without drinking. Me being sober at supper time might also have something to do with my better half's happiness. :mj07:

I only had two ribs and a small amount of beans. I have to save my slurge day for Lambeau. :00hour

I'm not holding my breath for a Packer win tomorrow. :facepalm:

I made the beans today and am eating them as I type.

THEY ARE GREAT!! :0074

This recipe is a keeper :0008

(I just made them in the oven and didn't use the jalapenos because nobody else here would eat them. Also used 1/4 cup yellow mustard instead of the powered)

i'm going to make the beans again on Saturday and changed the main course to ribs :)
