I've tried so many different chili recipes and can't seem to find the 'wow' recipe.

Any madjackers have a good one?

Teaxs Style Chili con Carne
2 to 4 Ancho chiles, 4-8 small dried red chiles or 2 to 4 tablespoons chili powder
4 tablespoons vegetable oil
3 pounds lean beef chuck, cut in bite-sized pieces
1 to 2 cups beef stock or water
1/3 cup finely chopped garlic
1 yellow onion, finely chopped
2 tablespoons ground cumin
1 tablespoon ground oregano
? cup Hungarian sweet paprika
1 or 2 Fresh cilantro sprigs
salt to taste


If using chiles, trim the stems and remove seeds. Place in a small saucepan and
add water to barely cover. Bring to a boil, remove from the heat, cover and let
stand for 15 minutes. Transfer the chiles and their soaking water to a blender
or a food processor fitted with metal blade. Pur?e until smooth. Set aside.

Brown half of the meat in a large skillet in the vegetable oil over high heat for
6 to 8 minutes. Transfer the meat and juices to a heavy pot and add the pur?ed
chiles or chili powder, if using. Place over low heat and bring to a simmer.
Meanwhile, brown the remaining beef in the same manner, then transfer it
and the juices to the pot. Add enough stock or water to just cover the meat.
Bring to a boil, reduce the heat to low and simmer, uncovered, for 30 minutes.

Add the garlic, onion, cumin, oregano, salt to taste, paprika and cilantro and
continue to simmer, uncovered, stirring occasionally, until the meat is very
tender, another 30 minutes. Add a little liquid if the mixture begins to stick
or looks too dry. When the chili is ready, using a large kitchen spoon, skim
any fat from the surface. Ladle into bowls and serve. Makes 4 to 6 servings.

30 min Chile recipe...It's not bad if you need a Chile fix.

1lb ground beef
1 jar chunky salsa
1pkg chile mix
1 can red kidney beans

Brown the beef add all the other ingredients and spice it up the way you like it.

Actually it's pretty good and simple too!

Chili Recipe Courtesy of Emeril Lagasse :


2 tablespoons vegetable oil
2 cups chopped onions
Salt
Cayenne
2 pounds stew meat
1 tablespoon chili powder
2 teaspoons ground cumin
Crushed red pepper
2 teaspoons dried oregano
2 tablespoons chopped garlic
3 cups crushed tomatoes
1/4 cup tomato paste
2 cups beef stock
1 cup canned dark red kidney beans
2 tablespoons masa flour
4 tablespoons water
1 bag Tortilla Chips
1 1/2 cups grated Monterey Jack cheese
6 tablespoons sour cream
1 small jar of jalapenos

In a large saucepan, heat the vegetable oil. When the oil is hot, add the onions and saute for 3 to 5 minutes, or until the vegetables start to wilt. Season with salt and cayenne. Stir in the stew meat, chili powder, cumin, crushed red pepper, and oregano. Brown the meat for 5 to 6 minutes. Stir in the garlic, tomatoes, tomato paste, beef stock, and beans. Bring the liquid up to a boil and reduce to a simmer. Simmer the liquid, uncovered for 1 hour, stirring occasionally, or until the beef is tender. Skim off the fat occasionally. Mix the masa and water together. Slowly stir in the masa slurry and continue to cook for 30 minutes. Reseason with salt and cayenne

Skyline Chili and Gold Star Chili both pretty much suck.

It's hard to do good chili for a fast food joint due to the required time involved. It's very similar to fast bbq. :nono:

With that being said, Wendy's serves a pretty decent bowl if you need a fix, but I wouldn't base a business around it like Skyline/Gold Star do.

in a van down by the river
1.5 lbs ground chuck
1 large onion,chopped
1 clove fresh garlic minced
1 teas salt
1/4 teas cayenne
1/4 teas cumin
1/4 teasoregano
2 tbls chili powder
1 can rotell tomatoes undrained
1 [8 oz]can tomato sauce
1 [16 oz can red kidney beans]
8 oz's tomato juice

brown meat,onion and garlic,drain well
add rest of ingriedients
mix well bring to a boil
simmer 1/2 hour uncovered and 1-1/2 hours covered
if too thick add additional tomato juice or water.

INEXPERIENCED CHILI JUDGE


Notes From An Inexperienced Chili Tester Named FRANK, who was visiting
Texas from the East Coast: "Recently, I was honored to be selected as a
judge at a chili cook-off. The original person called in sick at the last
moment and I happened to be standing there at the judge's table asking
directions to the beer wagon, when the call came.

I was assured by the other two judges (Native Texans) that the chili
wouldn't be all that spicy, and besides, they told me I could have free
beer during the tasting. So I accepted."

Here are the scorecards from the event:

CHILI # 1 MIKE'S MANIAC MOBSTER MONSTER CHILI

JUDGE ONE: A little too heavy on tomato. Amusing kick.

JUDGE TWO: Nice, smooth tomato flavor. Very mild.

FRANK: Holy shit, what the hell is this stuff? You could remove dried
paint from your driveway. Took me two beers to put the flames out. I hope
that's the worst one. These Texans are crazy.

CHILI # 2 ARTHUR'S AFTERBURNER CHILI

JUDGE ONE: Smokey, with a hint of pork. Slight Jalapeno tang.

JUDGE TWO: Exciting BBQ flavor, needs more peppers to be taken
seriously.

FRANK: Keep this out of the reach of children I'm not sure what I am
supposed to taste besides pain. I had to wave off two people who wanted to
give me the Heimlich maneuver. They had to rush in more beer when they
saw the look on my face.

CHILI # 3 FRED'S FAMOUS BURN DOWN THE BARN CHILI

JUDGE ONE: Excellent firehouse chili! Great kick. Needs more beans.

JUDGE TWO: A beanless chili, a bit salty, good use of peppers.

FRANK: Call the EPA, I've located a uranium spill. My nose feels like I
have been snorting Drano. Everyone knows the routine by now get me more
beer before I ignite. Barmaid pounded me on the back; now my backbone is
in the front part of my chest. I'm getting shit-faced from all the beer.

CHILI # 4 BUBBA'S BLACK MAGIC

JUDGE ONE: Black bean chili with almost no spice. Disappointing.

JUDGE TWO: Hint of lime in the black beans. Good side dish for fish or
other mild foods, not much of a chili.

FRANK: I felt something scraping across my tongue, but was unable to
taste it, is it possible to burnout taste buds? Sally, the barmaid, was
standing behind me with fresh refills; that 300 lb. Bitch is starting to
look HOT, just like this nuclear waste I'm eating. Is chili an
aphrodisiac?

CHILI # 5 LINDA'S LEGAL LIP REMOVER

JUDGE ONE: Meaty, strong chili. Cayenne peppers freshly ground, adding
considerable kick. Very Impressive.

JUDGE TWO: Chili using shredded beef, could use more tomato. Must admit
the cayenne peppers make a strong statement.

FRANK: My ears are ringing, sweat is pouring off my forehead and I can
no longer focus my eyes. I farted and four people behind me needed
paramedics. The contestant seemed offended when I told her that her chili
had given me brain damage, Sally saved my tongue from bleeding by pouring
beer directly on it from a pitcher. I wonder if I'm burning my lips off?
It really pisses me off that the other judges asked me to stop screaming.

CHILI # 6 VERA'S VERY VEGETARIAN VARIETY

JUDGE ONE: Thin yet bold vegetarian variety chili. Good balance of spice
and peppers.

JUDGE TWO: The best yet. Aggressive use of peppers, onions, and garlic.
Superb.

FRANK: My intestines are now a straight pipe filled with gaseous,
sulfuric flames. I shit myself when I farted and I'm worried it will eat
through the chair. No one seems inclined to stand behind me except that
slut Sally. She must be kinkier than I thought. Can't feel my lips
anymore. I need to wipe my ass with a snow cone!

CHILI # 7 SUSAN'S SCREAMING SENSATION CHILI

JUDGE ONE: A mediocre chili with too much reliance on canned peppers.

JUDGE TWO: Ho Hum, tastes as if the chef literally threw in a can of
chili peppers at the last moment. I should take note that I am worried
about Judge Number 3, He appears to be in a bit of distress as he is
cursing uncontrollably.

FRANK: You could put a grenade in my mouth, pull the pin, and I wouldn't
feel a damn thing. I've lost sight in one eye, and the world sounds like
it is made of rushing water. My shirt is covered with chili, which slid
unnoticed out of my mouth. My pants are full of lava-like shit to match my
damn shirt. At least during the autopsy they'll know what killed me. I've
decided to stop breathing; it's too painful. Screw it. I'm not getting
any oxygen anyway. If I need air, I'll just suck it in through the 4-inch
hole in my stomach.

CHILI # 8 LESTER'S LAST OF THE RED-HOT LOVER'S CHILI

JUDGE ONE: A perfect ending, this is a nice blend chili, safe for all,
not too bold but spicy enough to declare it's existence.

JUDGE TWO: This final entry is a good, balanced chili. Neither mild nor
hot. Sorry to see that most of it was lost when Judge Number 3 passed
out, fell over and pulled the chili pot down on top of himself. Not sure
if he's going to make it. Poor Yank, wonder how he'd have reacted to a
really hot chili?
