My specialty, learned this one in college when I use to wait tables at a fancy restaurant called the french cafe in the old market in omaha, nebraska. You'll love it.
Serves two people:
A stick of butter
2 Orange roughy filets (about 1 lb)
6 tablespoons of lemon juice
4 tablespoons of Grey Poupon mustard
2 garlic cloves
Ground garlic, mix garlic with lemon juice, mustard, and butter on skillet (or aluminum foil "self made" pan if cooking on grill - I do mine on BigGreenEgg) and simmer warm. Wait until sauce cooks into fish w/o burning. You should know when it is done.
