I use the following sauce for mine. Mix in whatever meat you want (ground beef, turkey, whatever), beans, diced tomatoes and some diced chilil's. You can vary those other ingredients to your liking. The sauce itself has a 'sweet-heat' taste to it, I altered it from a wing recipe and it works well as the chili base:


2 Cups Red Wine Vinegar
4 tabelspoons Honey
4 Tablesppons Dijon Mustard
5 tablespoons Chipolte Pepper Puree, or a chipolte hot sauce
4 tablespoons vegetable oil
4 table spoons ancho chile powder
4 tablespoons regular chili poweder
1 stick of butter

melt the butter and then mix in the other above ingredients for the sauce. Brown the meat and then combine the sauce, meat and other ingredients and let simmer for a handful of hours.

If you don't like the taste of red wine vinegar, cut it half or completely and replace with a bbq sauce that you like the flavor of.

Here is one that I've made numerous times thats a little different than traditional chili, and has always been well recieved.

1 lb. ground turkey
1 lb. pork sausage (heat is up to you)
1 lg. onioin
2 garlic cloves, chopped
1 lg. green bell pepper, cut in chunks
1 lb. smoked sausage, cut in chunks (use hot if you like)
1 T oregano
3 T chili powder
1 t ground coriander
2 cans stewed or chunked tomatoes
2 cans dark red kidney beans (drained)

Brown ground turkey and ground pork sausage with onions and garlic in a large pot over meduim heat. Add bell pepper and smoked sausage and cook for about 5-10 minutes, then reduce heat to low and drain any fat. Add spices and tomatoes, simmer 5-10 minutes. Stir in kidney beans, simmer for another 10-15 minutes. Its ready
