Each fall a family friend brings us a deer. Here is the stew today:

2.5 lbs cube steak (deer)
1 large onion, coarsely chopped
6 small potatoes, coarsely chopped
jar green salsa
can green chilies
couple cups of chicken stock

Cut the steak into 1/2" cubes and tossed it in a mixture of 1/4 c. flour, 1 t. cumin, 1 t. sage, 1 t. seasoned salt, 1/4 t. pepper. Browned it in oil, then tossed it in the slow cooker with the rest of the ingredients. Deglazed the saute pan with 3 T. vinegar and put that in the cooker as well.

I may drop some cornbread dumplings in the cooker later, depending on the consistency of the stew.



Any good deer recipes, post them here! I have a lot of deer to cook :0074

Absolutely the best tasting deer I have ever had! Couple buddies who have had deer about every way possible were raving too. :toast:

Andy - I did take two bites. The stew was delicious. I just couldn't get over eating bambi, lol. However, deer is a great choice for red meat - lean, renewable, cheap, and delicious...



Tonight:

1.5 lbs cube steak, chunked
3 T. olive oil
2 medium onions, diced
4 cloves garlic, minced
1 T. ginger, minced
2 c. water
big can diced tomatoes
1/2 t. berbere (ethiopian spice, could probably omit or use another all-around type seasoning)
1/2 t. cayenne
1/2 t. cumin
1/4 t. nutmeg
1/2 c. peanut butter
Salt and pepper

Browned the cube steak in half of the oil (very hot), then removed meat and sauteed onions in remaining oil. Added garlic and ginger last two minutes, then added tomatoes, spices, water, and meat.. Simmering now - going to let it go about 2 hours then add peanut butter, salt, and pepper.

Will serve over rice.

Backstrap thin sliced

cook a couple slices of bacon(any kind) just want a little fat in the pan.

I pound the backstrap with a meat mallet very thin dip in egg then flour.

get the pan pretty hot (not so hot the oil smokes)

cook each side 1 min. then you are done Yum YUM

Like HH said venison is very lean
Makes a great sausage with little fat
When cooking.. It needs to be cooked hot and fast or in a stew or soup or wrapped in bacon :facepalm:
