IPod-ITunes question...........Help

I have an IPod all set up with ITunes and have been using it for years. My question is:

How do you set up a different IPod to the same computer but only hand pick the music you want on it from the current selections and not all of it ???

Never did it with a different IPod, but did it with an Ipod shuffle, and it allowed me to manually click and drag the songs from my playlist into the shuffle. Wasn't the fastest process but worked fine.
