I just picked up some fresh crawfish/mudbugs

Getting ready for a crawfish boil

1) in a cooler or large plastic tub rinse them off with water and repeat until the mud comes off them.

2) purge the crawfish Pour fresh water over the live crawfish just until they are submerged (No salt for me) Stir gently to get everything moving. let them sit in the water for 5 to 10 minutes
drain and do it again.

3) Drain the crawfish and they are ready for cooking and remove the dead ones

4) Fill a huge stock pot, preferably fitted with a basket insert,

2 lemons, halved, plus more for serving
3 bay leaves
2 teaspoons salt
1/4 cup Old bay seasoning
2 medium onions, quartered
1 head garlic, halved
red new potatoes
sweet corn, halved
smoked sausage,

Squeeze the lemon juice into the water, tossing in the halves

Add the bay leaves, salt, seasoning, onions, and garlic; bring the broth to a boil over medium-high heat and simmer for 10 minutes

Add the potatoes and sausage to the pot to give them a head start and simmer for 15-20 minutes

add the corn simmer for 5 minutes

add the crawfish and shut off the heat. Cover the pot and let stand for 30 minutes

Drain and spread the crawfish, sausage, corn, potatoes, and onions out on a table that's covered with newspaper. Now sprinkle with more Old bay seasoning :00hour

Serve with lemons, hot sauce, and plenty of napkins.
