My new smoker

I was pretty close to buying a BGE but I thought I'd give this a try first.

I lost count but I built this "ugly drum smoker" for somewhere around $50. It can cook at 225-250 degree for 20+ hours with about 10 pounds of coal and a few chunks of apple wood.

I'm afraid my side fire box model might not get used too much anymore.

I found pork shoulder on sale for 99 cents a pound this morning. I took that as a sign to start the smoking season.

There goes the diet...

How do you prep and cook yours?

I usually do a 3-2-1 type thing. I'm going to try not foiling next time.

We just got nailed with snow again so I've got them going in the oven (smokers at camp) at 250 loaded with dry rub for about 2.5 hrs then out to the grill 350ish for 15min, then Honey BBQ Sauce for another 15min. (usually soak in Apple Juice over night but was lazy)

Over 15 hours later and this drum is still running strong at 250. Just pulled the shoulder off the cooker and triple wrapped in foil and into the cooler over night. Tomorrow morning when I wake up this thing will be piping hot ready to pull.

Jeeezz how long you cooking that, looks like maybe 4lb pounds of meat :shrug:

I don't go by time but by internal meat temp. I took the meat up to 205 degrees. Now its "resting" in the foil/cooler. It continues to slow cook while in the foil. The internal juices redistribute during this time as well. To answer your question though this one took over 10 hours. It was a 9.5 pounder.

I read about a guy who injected apple pie shots into the shoulder during the cooking process. I might try that next time.

Got any schematics for that smoker? My company gets tons of drums in and we have about 10 sitting empty as we speak. Would love to build one of these puppies.

I'll dig up the plans that I used and post tomorrow. They are at work somewhere. Trust me, if I can build one anyone can.
