I've never see Zatarain's Smothered Chicken! I looked online and found they also had something called "Zatarain's Mossy Oak Jambalaya Mix"
Using chicken broth instead of water always good!
my bro will simmer the fried chicken chunks (and broth), fried sausage, onion and bell peppers with couple cans of tomatoes for few hours before putting in the Zatarain's. Real good dat!
and if you get the Central Gro. muffuletta for trip back--just notice the expressions on fellow passengers in plane when you pull that puppy out to eat!

you MUST go to to Mother's on Poydras street, (downtown)and get the "Ferdie"---roastbeef with debris, ham, coleslaw on crunchy french bread....
go around 11:00 or you'll be waiting awhile...
also MapQuest, Tony Angleo's in Metarie. A family owned Italian restaurant----go hungry and get the 7 course meal....the eggplant is the best I have EVER had...
Acme is good for seafood and oysters. I RATHER Drago's....they must opened on in the Hilton lobby at end of canal, across from Harrah's....
also Deanie's in BUCKTOWN has GREAT seafood and the BIGGEST seafood Platter you will lay eyes on...get there early....
my favorite place is a lunch/brunch spot called Mandina's
dinner @ Gali's is a must

One of my favorite spots in the Quarter is The Gumbo Shop on St. Peter, just off Jackson Square.
As the boys from Nawlins have already said, you absolutely HAVE to experience the food and ambience at Mother's.
