As far as FSU/Wake...I'll agree part of it is "guys no one wanted with everything to prove" but its so much more about coaching.
I don't like Bowden but its hard to say he isn't a great coach. At the same time, a lot of his coaching has been having way more talent and depth at every position and not having to worry about fundamentals, discipline, etc.
Amato took a lot of guys that "no one wanted" as well, meaning no one in the state of Florida. He got all the thugs who weren't quite as good but were pretty equal in lack of fundamentals and lack of discipline.
Basically Grobe is a hell of a coach who goes out and gets good players with good character and has slowly built a nationally good program, which is "great" for Wake Forest.
