2 cans of whole tom.

2- can mixed vegs

1- good size onion

3- stalks celery

3 -good size potatoes

3/4- bag baby carrots

1- bag beef stew seasoning mix

2 lbs.- stew beef

2 cups of water

salt and pepper as you like


fill stew pot with baby carrots as is..potatoes cut the size of a golf ball[don't want them cooking down to fast]..seared/browned stew-beef...water..whole tomatoes..celery cut about an inch long..onion cut in eight's..

bring to a boil and the set to simmer for about 60 min.'s...I like to slice into the whole tomatoes at this point and then simmer for another 15 min.'s....now add the 2 cans of mixed vegs ...do a sample taste to see if you want more salt and pepper or a dash of more beef stew mix..or onion and whatever ya got in the pantry..today I added butts and stem mushrooms..

simmer for another 15 min's or so for mixed vegs to heat-up and work their magic..

*** of course for those more partial to green beans or peas or any other veggie you can sub or add a can of those into the mix.

this and my navy beans and hamhock are probably my fav's to make..those start w/a 2 day soak of the beans..


and can stretch a short food budget a long ways..

there was a time this batch of stew w/a $1.00 box cheapo saltines would get thru 2 weeks of supper.
