Tri Tip on the Big Green Egg :00hour

Tri Tip
This cut of meat is limited in availability. The tri-tip roast or steak (also called a triangle roast) is the 1 1/2 to 2 1/2 pounds of meat that sits at the bottom of the sirloin.


I am taking the easy way with the rub 1/3 of a can of Dizzy dust. Rub it all over the meat.

Let the meat stand at room temp at least 30 min.


Fire up the BGE to 600 no plate setter

Sear each side 2-3 min.
I like a good Char on the outside. Internal temp about 90 degrees.


Wrap in foil.

Now comes the hard part Get the BGE back down to 350 - 400. It might take 20 -30 min
Let the meat set in the foil.

Add some smoke .. soaked apple/pecan chunks/chips

I will use the plate setter now.
Return the tri-tip back in the BGE and cook to an internal temperature of 125-130 degrees
Should take about 30-40 min. I flip it once


FYI - Always cut against the grain.

I'm doing ribeyes tomorrow and BB too. :toast:

Just a rub... salt and pepper is ok.
Nothing overnight for a Tri Tip.

It a good cut of meat and does not need much

Let the meat stand at room temp at least 30 min.
before cooking.
