Ribs today!

They went on the smoker at noon.

I'm using the 3-2-1 method so almost time to foil!

I love to brine ribs in apple juice and sea salt(not alot)

then smoking with my homemade rub. My rub has a bite. The sugar from the juice darkens the meat - after the crusty spicy outside you get a nice apple -slightly sweet meat. I use lump charcoal- with hickory and mesquite.

Never thought about brining ribs. I will next time.

I used hickory and mesquite today and misted with apple juice about every half hour!!

Misting the ribs is a MUST , i mist every 20 mins or so. Cook ribs for 3 1/2 to 4 hours
