i just throw a dry rub on them, put them in a roasting pan with a rack...fill bottom of pan with a nice IPA, cook as low as oven goes for 2-3 hrs. take them out, finish them on the grill w/some bbq sauce for a few minutes.
i've heard of people cooking them in saran wrap, and they say since it's a low temp that it's not a big deal. not a chance i want to take.
