Put your favorite spices on them, and put in a smoker set between 225-250(i tend to go lower and slower). If you dont have time to watch over them for 5 hours, just smoke them for about an hour and then finish in the oven at the smae temps. After the first hour your not going to get anymore smoke in them. I leave them on the smaker the whole time, but it is an option if your're low on time. Enternal temp to 170ish should be fine. I prefer pecan, but plenty use Hickory. Any fruit tree would do as well. Did I tell you that I love smoked ribs:toast:

If you don't have a smoker then the oven is the way to go. Cover with tinfoil and cook low and slow... it helps break down the fibers in the meat. If you want barbecue sauce do it at the end and turn the oven up so the sauce can get nice and sticky.

i just throw a dry rub on them, put them in a roasting pan with a rack...fill bottom of pan with a nice IPA, cook as low as oven goes for 2-3 hrs. take them out, finish them on the grill w/some bbq sauce for a few minutes.

i've heard of people cooking them in saran wrap, and they say since it's a low temp that it's not a big deal. not a chance i want to take.
