I posted this one a few years ago. I haven't made it in a while, but now that I read the recipe, it is time to give it another go.:0074

I got this recipe out of the newspaper.

Salsa Soup

Ingredients:
1 Tbsp Vegetable Oil
16oz Salsa
32oz chicken broth
1 can black beans
1 can corn
1/2 cup chopped cilantro
1 diced avocado
shredded cheese

Instructions:
add veg oil to pot
mix in salsa at low/medium heat
bring broth to boil in separate pot
mix salsa and broth together, simmer 2 minutes
add beans and corn
simmer 5-7 minutes
turn off heat
stir in cilantro and avocado
serve in 4 bowls, top with cheese

Original recipe called for chicken, but I didn't have any...was great without it, but if you want chicken, add it when you mix the broth and salsa and bring to boil before adding beans or corn.

If you like mexican style soups, give it a go.

Roasted acorn squash soup
(This works well with Bacon or Pancetta. I actually prefer Pancetta, which is not smoked)


Slice and clean squash making what will look like several bowls. Add chopped shalots and onion to cavity in the squash. Roast until tender at 400.

In Dutch oven, render bacon. Then remove bacon and add onion garlic until caramelized. Deglaze with chick or veg stock. Scoop in the tender flesh of roasted squash along with roasted shallots and onion. Salt and pepper to taste.

Simmer until all ingredients are married, then pur?e with stick blender.
