The weight loss bet is over and I won. Time to treat myself. Tomorrow calls for light winds and it might actually hit 50 degrees.

That means applewood smoked pork butt, bacon wrapped cheese filled jalapenos, wicked beans and way too much beer.

The cooker will get started first thing in the morning. The beer will get started around noon.

I'll meet all of you guys in the Sportsbar thread at 12:01.

What exactly do you do with your jalapenos if you don't mind me asking?

I'll try to take some pics tomorrow but its pretty easy.

I brown up some spicy jimmy dean sausage. While its hot I add in some cheese. I'm going to do two types cream cheese and some cheddar. That sort of turns into a paste. I cut the peppers in half the long way and fill them up with the meat and cheese. Then I put a piece of raw bacon over the top. When that is all done I throw them on the smoker at 225 for an hour or two.

I got fatter just thinking about these things.

I wonder how long I could put them on my grill for? I don't have a smoker, although I'm really thinking about getting one for the summer. I just don't know if I would use it that often.

If you can get your grill to stay at 225-250 it would be fine.

Otherwise put them in your oven at 225 until the cheese starts bubbling out. You'll know when they are done.

I am doing better...I ate at 11 last night but I have not had anything to drink this week except for Tuesday and still ended up with gout yesterday

Pork shoulder is on the cooker. Beans are made and ready. I'll put those on after the shoulder comes off and it's in the cooler resting.

Bacon wrapped jalapenos are prepped in the fridge. Those will go on at 11 for lunch. With a side of beer.

Aren't those beans good? As far as BBQ goes they aren't THAT bad for you either.
