This guy prepared my food tonight. We stop in on the way to my mother in laws beach house. Sea trout and a flounder. His boat is parked behind his fish shop. Fish are whole and he cuts them up in two minutes like he's probably done a thousand times. Can't get much fresher than that.
Tonight it's fish tacos. Pickled some red onions and jalape?os in rice wine. Sauce which is half mayo half sour cream with lime zest in it and some lime juice. Grill the fish and fajitas and combine. Mmmmmmm tasty.
