Got an invite today from a bartender that has Monday's off....she said bring beer, yourself and a extra cooler if you have one. She's hooked up with a guy, so I'll bring a fishing pole as well, they are on a canal. Should be a good time, both grill well!

Weather is gonna be in the 70's and this is going to be a cheat weekend!! :toast:

Local market has a sale on ribeyes ($5.99/lb). They were awesome with a dry rub I got from the food net.

Had them tonite for wifes Bday and she approved.

Thinking about buying the premade at the store and warming them up. . . .

Figure it out, it's easy and you'll be all proud.

Hint: LOW AND SLOW

Soak the Ribs in a Premium Dark Beer for 24hrs

Salt, Pepper, Hot Salt, Onion Powder, Garlic Salt

And as Jack said, Low and slow, I start off at 160 and every 2 hours bump it 80 degrees.

My sauces vary, but the bases are the same. KC Materpiece. Hot Mutard, Green and Red Tabasco, 2 Tablespoons, or more crushed garlic. Peach and or Apricot Preserves, Cherry Preserves, All to your preference?

Bring to boil, simmer for 15 mins.

I am using a dinosaur BBQ so finding a good low temp isn't easy, so I do the first part of the cooking in the oven.

Once Ribs are on grill, only apply sauce for last 8-12 mins

I'm not taking a short cut, I'm cheating. The goal is not to give anyone food poisoning (so boiling may be an option ;) ). This is something I want to get good at so I'll give it my best shot. Don't have many opportunities to make Ribs with my pescatarian diet :SIB

For those of you using the smoker, these are the absolute best baked beans ever!! Trust me! Put them in smoker for that smokey flavor. But even in the oven they are awesome

Im smoking Ribs a Brisket, and maybe a pork butt. I'm sure we will have burgers once too.

Bean recipe

WICKED BAKED BEANS
(Beans that will even make Chili Heads happy)

6-8 strips of bacon cut into 1/2 inch squares
1/2 Medium onion, diced
1/2 Bell pepper, diced
1 - 2 Jalapeño Peppers, diced (seeding is optional)
1 - 55 ounce can Bush’s Baked Beans
1-8 ounce can of pineapple chunks, drained
1 Cup Brown Sugar, packed
1 Cup ketchup
1/2 - 1 Tbs. dry (ground) mustard

Sauté bacon pieces in fry pan until crispy and remove from pan with a slotted spoon. Sauté onion, bell pepper and jalapeño pepper until tender.

In a large mixing bowl combine beans, pineapple, brown sugar, ketchup and dry mustard. Stir in bacon pieces and vegetables. Pour into a 12X9 or a deep 9X9 aluminum baking pan. (While mixing if things look dry, add additional ketchup 1/4 -1/2 cup at a time)

Place in a 220-250° smoker for 2 1/2 – 3 hours (make sure temperature of the baked beans reaches 160° ) or place in a 350° oven and bake for 1 hour.

NOTE: If you are making these beans as a side dish for Kansas City style pork ribs, smoke the removed skirt meat for 1-1 1/2 hours, then dice the skirt meat and stir into the Baked Beans.

DISCLAIMER

With the Jalapeño pepper and the dry mustard these beans have the potential for some MAJOR heat. CAUTION should be exercised when feeding these beans to small children and/or the elderly.

To make this recipe Family Friendly, omit the Jalapeño pepper and the dry mustard

I'm going with baby back ribs on Sunday and this baked beans recipe.

Recipe:
5 one lb. cans of white or kidney beans
1/4lb. thick-cut bacon
1/4 cup maple syrup
1 cup brown sugar
1 cup chopped onion
1/4 cup molasses
1/4 cup ketchup,
1/4 cup cider vinegar
4 tbs yellow mustard

Mix ingredients in a black iron pan and then simmer in a covered grill for about an hour, or until the excess liquid simmers off. Move the pan to indirect heat (opposite the coals) and then cover the grill for an additional hour, or until the beans are just the way you like to eat them.

Hamburgers Saturday with other sides but nothing special.
