Yep, depends on what the situation calls for. The Naga Jolokia (they also bottle the same and label it ghost pepper) Melinda's is very intense. Must use sparingly. Has a wonderful natural smoky flavor.

the XXX Melindas will ad heat without changing flavor of dish. I use to cook with

The chipotle chalula is my fav of the chiptle sauces....tabasco, which has similar ingredients and is a vinegar base, is big around here, but the chalula has deeper smoky flavor. Vinegar based hot sauce like these change the flavor of food, so I only use when I am looking for that or as a condiment.
