Changed my gasket today. I hope that allows me easier high temps. First change since I got it about 5 years ago.

And you don't have to take the fucking lid off either.

PLUS, and I'm excited to try it, I got a cast iron grate for searing my steaks.

Searing steaks is taking your grilling experience to another level. You should also get a ribeye and age it in your fridge.

I tried that ageing thing on a prime rib for 7 days.

Wrap in cheesecloth and put in the coldest part of the fridge changing the cheesecloth and rotating every 2 days.

Didn't make a difference in my opinion.
