Just got in from the backyard as we are preparing to smoke a turkey tomorrow.
We started with charcoal and just couldn't keep the heat at the right level for cooking.
We then bought a basic round, red smoker from Home Depot for under $100 and it works great. It is electric named Brinkman Gourmet electric smoker.
It has two shelves and accomodates a large turkey on one shelf and then we usually add fish or brisket to the top shelf and then freeze the extra.
A 16-20lb turkey will take eight hours (or more) but, you really don't have to continually check it or lift the lid.
You probably know you can buy the chips at WalMart...soak overnight...and we usually throw some cheap vodka or a cheap bottle of wine in the water for the smoker (not the chips).
Good luck and it is definitely worth it especially if you load it up whenever you use it.
