Feeding 60 people--Need Help

Monday night is the Blue and Gold banquet for the Webelos moving over to Boy Scouts.

The Tiger Den is responsible for a main entree.


The theme is Mexican.

It couldn't be Italian where I could do spaghetti or lasagna.

Any suggestions on feeding 60 people.

Tacos would seem to be a lot of trouble,

I was thinking going to Costco and getting enchilidas and just heating them up.

Kids won't go for taco salads,

Bear Den is bringing side dishes, prob. beans/rice, so I really don't know what to make as a main dish.

quesadillas are easy as hell

can be made a million different ways with different ingredients

large or small

not too much $$

Forget the theme, tell em you made a mistake. Then give em the Italian anyway...............they'll like it a lot better !!

just talked with one of the dads, he's bring taquitas, just heat and serve.

I'm gonna get pick up some mixed variety packs at costco or sam's and heat and serve.
