I can't wait to see how your brisket goes. If you've got the big full cut then I'm guessing about 1.5 to 2 hours per pound.

After the smoke and foil people normally can "pull" the point just like a pork shoulder. Then they slice the flat. If you're real lucky then the whole thing with pull apart.
