grilling out in back yard all 3 days and drinking plenty of beer.

now i need some ideas of what to cook. so far, all i can think of is chicken, burgers and steaks :shrug:

which is fine but i'm hoping for a change.

Grilled mahi mahi is a delicious low fat, high protein, low carb entree. For this recipe, the serving size is a half pound, but you can certainly have a quarter or third pound serving, whatever your appetite supports. You can grill over charcoal or gas, or roast in the oven.
INGREDIENTS:
1 pound mahi mahi
1 cup Paul Newman's Caesar salad dressing or italian salad dressing for marinade
Salt to taste
PREPARATION:
1. If fish is frozen, defrost in refrigerator ahead of time.
2. Place fish in plastic bag or marinator with the caesar salad dressing - refrigerate - for 30-60 minutes

3. Start grill or coals and bring up to temperature.

4. Cook with indirect heat - if using a charcoal grill, form some aluminum foil into a round disk 6 inches across and place just above the coals. If using a gas grill, turn off the center flame.

5. Remove fish from marinade.

6. Place fish on the grill, grill for approximately 5-8 minutes per side. When you turn the fish, brush it with more of the caesar dressing. Cook until cooked through - do not overcook.

7. Serve with grilled vegetables prepared at same time on the grill - skewers of red and green peppers, tomatoes, onions, zucchini, etc.

No need to be sorry. I'm glad I can provide my sports-loving brethren with some humor. Hope everyone is off to a good start to their weekends.

No trimming performed yet...I hope I can operate the thing. It has a cord, so how hard can it be?

you've got to have mahi fresh... If you are buying it from a grocery store then forget about it...

true dat. But when you are a LONG way from the ocean, its hard to do.
We have a fish market here that flies in Mahi Mahi, Swordfish, fresh oysters,ect ect, that has been 'flash frozen' and then they thaw it here. Sells for about what you pay for a decent cut of beef--11-15 a pound depending on what fish you are buying....

I've got a 1.5 lbs of Swordfish in the fridge for the grill tonight; Sunday its steak and chicken...add a few bottles of wine and plenty of locally brewed beer, a few friends and family members--then sit back and enjoy.....:D

I have Corona, Bud Light and a variety pack of Mike's Hard Lemonade. I also have Margarita mix and Daiquiri mix and mudslide mix. I rarely drink any of the stuff, it's mostly for my guests.

As for FDC, I couldn't keep waiting, beloved. As much as I appreciate your half-price offer, I will have to decline. Perhaps I will see you on Lake Lewisville? That will be me going about 70 mph on my jet ski... See ya!

Did I say half price? I meant for free!!! Besides, jet skis can't do 70mph. My boat tops out at about 76 mph and I have never had one that has ever been able to keep up. Then again, who knows. You probably have already seen me on that lake if you go there often enough, doesn't mean you had to go get another man though. I was the one waiting on you remember?!?!?!!?!!?

Alas, we may never meet and our only chance at everlasting happiness will be lost in the wake of a 250 HP Yamaha outboard. I have to go now I am tearing up. Besides that I have to leave the water awaits. Good bye my love.

I was just getting in from the mojo forum and happened by. I was wondering if the new boyfriend had anything to do with the yard work ?

New boyfriend , what happened to the pilot dude. fatdaddycool should have been given first chance and I , pending divorce proceedings would want consideration for at least developing some dvds.

I hope everyone enjoyed their weekends, as I surely did mine. I did trim the bushes, and let me tell you, that is NO fun. It sucks, especially in 100 + degree heat. And, no, I do not ask b/f's to do any of my stuff around the house. I do think it's nice when they offer, though. I think I will have to hire it done from here on out. The mowing and the edging is fun, but the hedging sucks. The Hedgehog from Home Depot wasn't quite as impressive as I was hoping it would be. I mean, it did the job, but that's about it.

On the plus side, I did pluck many nice zucchini squash, crookneck squash, Anaheim peppers and bell peppers from my garden. Woo hoo!
