Sauteed Red Chard

This can work as a main dish for one or a side dish for two/three.

Ingredients:
Two Red Chard Leaves
1/4 Onion
Olive Oil
White Vinegar
Minced Garlic
Salt & Pepper
Parmesan Cheese

Put a skillet over medium heat (I use 3 out of 10 on my electric stove).
Add enough Olive Oil to coat the bottom of the skillet.
Cut the spine out of the Red Chard, chop of the spine and throw it in the skillet with diced onion.
Let the onions and chard soften a bit under heat (a few minutes).
Add in a splash of white vinegar (Approx 2 tbsp) and add in the minced garlic (2 tsp)
Chop the red chard leaves and throw them on top of the veggies and cover the skillet.
When the leaves start to wilt, add a couple tsp of olive oil and stir everything up.
Add salt and pepper (Old Bay is good too) and plate.
Sprinkle on Parmesan cheese and serve.

Simple and relatively quick.
