Wife bought way too much butt but going to smoke 34 pounds for pulled pork and about 50 people. WAY too much considering all the other stuff she's cooking. Any suggestions for sauces, I want a variety?

1/2 cup apple cider vinegar
1 tbsp dark brown sugar
1/8 tsp teaspoon cayenne pepper
1/2 tsp teaspoon salt
1/2 tsp pepper black pepper
1/2 cup ketchup
1/4 cup ginger ale

Heat apple cider vinegar just to boiling then add brown sugar. Turn off heat and add the rest of the ingredients.

I would make this up today and let it sit in the fridge overnight. Its thin like a finishing sauce that you pour over the sandwich. Its not a thick BBQ sauce.

This is similar to a recipe I've used on many occasions to make my own sauce. To thicken it up a bit, add some finely diced sauteed onions and/or more ketchup, but make sure it's the kind with real sugar and NOT high fructose corn syrup! Heating that shit up can make things taste nasty. Also, add a little worcestershire, some onion powder and pinch of cumin and ground cinnamon... you won't regret it :0074

I already fucked up. I took the egg apart to clean all the ash out and instead of using a vacuum or just brushing the ash out I used the convenient blower that was nearby and handy. Ashes everywhere, looked like a sand storm. All the windows and patio door all dusty, pissed off my wife who had them sparkling clean for all the company. :mj07:
