The thermo that I'm using today has two probes. One for the meat and one to eye the cooker temp. If I put the probe right on the grate it reads too high. So I stick the other probe through a potato to have a more accurate reading. That way I can keep it right at grate level no matter where I have the meat. Sometimes people eat it but I just throw it away.
At the inlaws cottage we drilled a hole in a chunk of wood instead.
The thermos that comes with most cheap smokers like mine are junk. I never even look at it.
