That would be sweet but this weekend won't work. Shit. Family get togethers and whatnot. I'm actually taking Saturday and Monday off too. I'll be here and there and all over the place this weekend.

What are we, chopped liver? Thought this was the Madjacks family?????

Forget the grill!!

Visiting a friend in Baltimore. Hot, steamed jimmies are in my foreseeable future! Perhaps I'll even indulge in a cold adult beverage! :)

Yeah, I'll be sure and do that with my company car, a Hertz truck, on a Friday morning at 8 AM. You are a sharp tool kittycat. One thing we have always promised is to NEVER drink and drive. Kids are on board too with that motto.

It is a really simple rule in our house. One DUI and you will NEVER see another dime from me EVER. Simple as that. Especially when I have gladly paid for 2 cab rides of theirs in 4 years with their friends. It is a simple phone call, period.

8 oz all beef burgers sauteed with onions , jack daniels steak suace , on grille about 6 minutes each side ineer temp 170 degrees and just a wee bit pink in middle.

add your toppings on a large soft kaiser roll and you drink beside you and enjoy !

DO not use garlic or any other heavy seasoning that ruins the beef flavor

Tri Tip on the Big Green Egg :00hour

Tri Tip
This cut of meat is limited in availability. The tri-tip roast or steak (also called a triangle roast) is the 1 1/2 to 2 1/2 pounds of meat that sits at the bottom of the sirloin.


I am taking the easy way with the rub 1/3 of a can of Dizzy dust. Rub it all over the meat.

Let the meat stand at room temp at least 30 min.


Fire up the BGE to 600 no plate setter

Sear each side 2-3 min.
I like a good Char on the outside. Internal temp about 90 degrees.


Wrap in foil.

Now comes the hard part Get the BGE back down to 350 - 400. It might take 20 -30 min
Let the meat set in the foil.

Add some smoke .. soaked apple/pecan chunks/chips

I will use the plate setter now.
Return the tri-tip back in the BGE and cook to an internal temperature of 125-130 degrees
Should take about 30-40 min. I flip it once


FYI - Always cut against the grain.
