The BEST Shrimp Salad you ever had

I'll base this on 1 pound of medium shrimp. Large shrimp are not necessary because you're going to cut into pieces anyway.

1 pound medium shrimp
1/3 cup mayo. Real fukin mayo.
1/3 cup celery chopped like you would for tuna salad.
2 tablespoons Old Bay (absolutely necessary and I use more than that. Use to taste by using a little at a time and tasting.
1 teaspoon cayenne pepper


Steam your shrimp, or boil it (yuck) or grill it, anyway you want really. I prefer steaming it and it never touces the water. Steam in 1 cup water and 1 cup vinegar about 5-8 minutes until they are nice and orange/red.

Let 'em cool off so go drink a beer or 2.

Cut medium shrimp into about 3rds.

Put everything in a bowl and mix it up. Put in refrigerator for a couple hours so it can get cool and everything gets absorbed together.

Put on favorite toasted bread and enjoy the best shrimp salad you ever had.

People from the mid west out here rave about it because they never had it before.

Whoever trys this will definitely be back to thank me. And use your spices to taste. I sometimes get carried away with the cayenne and my wife bitches at me :D

I had this one at a party and the person who brought the dish told me she used this receipe from food network........


Ingredients

2 1/2 pounds (12 to 15 count) shrimp
1 tablespoon good olive oil
Kosher salt and freshly ground black pepper
1 cup good mayonnaise
1 tablespoon orange zest (2 oranges)
2 tablespoons freshly squeezed orange juice
1 tablespoon good white wine vinegar
1/4 cup minced fresh dill
2 tablespoons capers, drained
2 tablespoons small-diced red onion
Directions
Preheat the oven to 400 degrees F.

Peel and devein the shrimp. Place them on a sheet pan with the olive oil, 1 teaspoon salt and 1/2 teaspoon pepper and toss together. Spread the shrimp on one layer and roast for 6 to 8 minutes, just until pink, firm and cooked through. Allow to cool for 3 minutes.

Make the sauce. In a large bowl, whisk together the mayonnaise, orange zest, orange juice, vinegar, 1/2 teaspoon salt, and 1/2 teaspoon pepper. When the shrimp are cool, add them to the sauce and toss. Add the dill, capers, and red onion and toss well. The flavors will improve if you allow the salad to sit at room temperature for 30 minutes.

When i had my resturant we used a Mayo called Admiration. This mayo blew them all away. I always liked Hellman or Kraft but ya got to taste this stuff. Only problem i never saw it sold less then the gallon jug. Sams sells it. It has a red top in a clear plastic jug. My sister is into that no fat shit and when it is mayo to me ya can't mess around. I tasted this stuff and man it is the shit.

i can attest to spongy`s talent regarding all things cuisine...he`s honestly the real deal....

unfortunately,his marketing acumen left a little to be desired.....

Jack: What is your technique for steaming th shrimp? I always buy raw frozen shrimp and I always boil them.

If I were to boil them, I would use crab boil. I think roasting is better option in terms of flavor, but that is just me.

I have a pot that has a section in the bottom with holes in it but the shrimp can't get to the water. I just steam them with 1/2 water and 1/2 vinegar.

I plaster the shrimp with Old Bay before I steam them. Good :D

how`d you know about kibby`s,va?....

excellent shrimp salad...but for me,the best i`ve ever had was from mary mervis` stall at lexington market.....

unreal...huge,stuffed sandwich for $3.95(this was about 7-10 years ago)....

I served a few years in Charm City in the early-mid 80's. Back when Oprah was in town and had a cheesy morning talk show with Richard Sher. I always wondered if he got an offer to go to Chicago too.

Seriously, I remember the Lexington Market. I think a co-worker's uncle had a barbecued chicken stand there that was to die for! They served it in plastic buckets and the sauce had a base of Old Bay. I never got to Tio Pepe's but my boss got us all tanked one time when he was trying to reproduce the Mexican coffee with the carmelized sugar on the rim. I did go toThe Pimlico and some place where the sommelier thought he was a comic and would put on a show where he'd bring up the shaker over his head and pretend to pass it like a football, feign hurting himself then he had some really poor bit about how he was Bert Jones. I don't remember the name of it but the ambiance was like eating in a wine cellar or something. It was a pretty well-known restaurant downtown that closed. I think it was between the Harbor and Fells Point but I'm not sure.

Sabatino's was my favorite place in Little Italy and I remember buying their salad dressing in the Giant Food. I loved G&M (in Linthicum, near the airport) for their crab cakes and cream of crab soup!

I also remember a place on Dorsey Rd that served mixed drinks with the liquor on the side, Timbuktu. Their happy hour was 2fer and they just automatically served two at a time. There was a piano bar where I remember getting a little rowdy with some of my girlfriends singing "Elvira" by the Oak Ridge Boys.

Are any/all of those places still there?

ok got all the ingredients and just got the salad made.

Didnt look like enough mayo but I wouldnt let my wife put any more in.

Wait two hours and see what it is.
