I'll base this on 1 pound of medium shrimp. Large shrimp are not necessary because you're going to cut into pieces anyway.
1 pound medium shrimp
1/3 cup mayo. Real fukin mayo.
1/3 cup celery chopped like you would for tuna salad.
2 tablespoons Old Bay (absolutely necessary and I use more than that. Use to taste by using a little at a time and tasting.
1 teaspoon cayenne pepper
Steam your shrimp, or boil it (yuck) or grill it, anyway you want really. I prefer steaming it and it never touces the water. Steam in 1 cup water and 1 cup vinegar about 5-8 minutes until they are nice and orange/red.
Let 'em cool off so go drink a beer or 2.
Cut medium shrimp into about 3rds.
Put everything in a bowl and mix it up. Put in refrigerator for a couple hours so it can get cool and everything gets absorbed together.
Put on favorite toasted bread and enjoy the best shrimp salad you ever had.
People from the mid west out here rave about it because they never had it before.
